What you’ll need
- 1½ cups all-purpose flour (or a gluten-free blend you trust)
- 2 tbsp Finch Purple Yam Powder
- 2 tbsp sugar or Finch Organic Coconut Sugar
- 2 tsp baking powder
- ¼ tsp salt
- 1¼ cups milk of choice
- 2 eggs
- 3 tbsp melted butter or oil
- 1 tsp vanilla
Method
- Whisk the dry ingredients: flour, purple yam powder, sugar, baking powder, and salt.
- In another bowl, whisk milk, eggs, melted butter, and vanilla.
- Combine wet and dry until just mixed — a few small lumps are fine.
- Rest 5 minutes while the waffle iron heats.
- Cook until crisp outside and soft inside. Keep warm in a low oven if stacking.
