Ube waffles with purple yam powder

Ube (purple yam) brings a gentle sweetness and a natural violet colour that feels special without being complicated — perfect for brunch plates and bakery displays across Canada.

Finch Purple Yam Powder blends into a classic waffle batter for colour and a soft, earthy note. For a deeper bake, you can also fold in a spoon of Purple Yam (Ube) Flour from our gluten-free range.

What you’ll need

  • 1½ cups all-purpose flour (or a gluten-free blend you trust)
  • 2 tbsp Finch Purple Yam Powder
  • 2 tbsp sugar or Finch Organic Coconut Sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1¼ cups milk of choice
  • 2 eggs
  • 3 tbsp melted butter or oil
  • 1 tsp vanilla

Method

  1. Whisk the dry ingredients: flour, purple yam powder, sugar, baking powder, and salt.
  2. In another bowl, whisk milk, eggs, melted butter, and vanilla.
  3. Combine wet and dry until just mixed — a few small lumps are fine.
  4. Rest 5 minutes while the waffle iron heats.
  5. Cook until crisp outside and soft inside. Keep warm in a low oven if stacking.

Serve with

  • Butter and maple, or coconut sugar whipped cream
  • Fresh berries and Finch sweetened dessert topping
  • A side butterfly pea latte for a full colour brunch
