Soft cassava flour tortillas for Canadian kitchens

Soft cassava flour tortillas are one of the easiest ways to bring gluten-free baking into everyday cooking — tacos, breakfast wraps, or a quick side for soups and curries.

Finch Organic Cassava Flour is mild, fine, and flexible when hydrated, so the dough rolls cleanly and stays soft after cooking.

What you’ll need

  • 2 cups Finch Organic Cassava Flour
  • 1 cup warm water (plus a splash more if needed)
  • 2 tbsp olive oil or avocado oil
  • ½ tsp fine salt

Method

  1. In a bowl, whisk the cassava flour and salt.
  2. Add the oil, then pour in the warm water. Mix until a soft dough forms. Rest 5 minutes.
  3. Divide into 8 balls. Roll each between parchment into a thin round.
  4. Cook in a dry skillet over medium heat, about 1–2 minutes per side, until lightly spotted.
  5. Stack under a clean towel to keep them soft.

Serve with

Scrambled eggs and greens, roasted vegetables, curry, or café-style breakfast wraps.
