Butterfly pea latte — colour from nature in a cup

Butterfly pea turns milk a soft sky blue — no synthetic dyes, just a plant colour that feels at home in Canadian cafés and home kitchens alike.

Finch Dried Blue Butterfly Pea Powder dissolves cleanly into warm milk. Add a squeeze of citrus and watch it shift toward purple — a small bit of kitchen theatre with every pour.

What you’ll need

  • 1 tsp Finch Dried Blue Butterfly Pea Powder
  • 1 cup milk of choice (oat or dairy both work well)
  • 1–2 tsp honey, maple, or Finch Organic Coconut Sugar
  • Optional: ½ tsp vanilla
  • Optional: lemon wedge, for the colour shift

Method

  1. Warm the milk gently — hot but not boiling.
  2. Whisk in the butterfly pea powder until fully dissolved and vividly blue.
  3. Sweeten to taste. Add vanilla if you like.
  4. Froth lightly for a café finish, or pour as-is.
  5. For the colour change: add a few drops of lemon and swirl — blue softens into lilac.
